So apparently it’s Christmas tomorrow. How did that happen?!!!!
Happy to say I have finished my shopping and was pleasantly surprised at the chilled out state of my fellow last minute shoppers. Maybe that’s the Gold Coast for you.
I read that Australians will be spending $10 billion dollars on food for Christmas. That’s a lot of food. For my part I will be chowing down on a 3 kilo snapper, scallops, prawns and calamari. As well as a massive ham. Ham and cheese toasties, ham omelette, ham and salad, ham and pea soup. Let me have your tips on how to use up leftover ham. Please.
I had fun in my kitchen yesterday, whipping up these raw Xmas Puddings, gluten and dairy free, rather delish they are too. (Recipe from Kim O’Connell of the Burleigh Markets LOHAS precinct – Lifestyle of Health and Sustainability)
Raw Xmas Pudding
1 cup hazelnuts
½ cup cranberries or raisins, soaked in 1/2 cup orange juice
1 cup dates (soaked)
1 cup walnuts
½ cup cacao
2 tbsp orange zest
1 tsp nutmeg and cinnamon
Mix dry ingredients in a food processor until it looks like bread crumbs. Add wet ingredients and mix. Scoop out sticky ingredients and roll into balls.
1 cup cashews
2 tbsp honey
2-3 tbsp lemon juice
2 tbsp lemon zest
Blend into a smooth cream, adding coconut water or almond milk to thin as needed.
